The molecular structure of sugar paste is altered by heating and cooling, which causes it to start crystallizing (similar to honey). This is why using a microwave is not advised, even though it is a choice at first if you are learning. Traditional wax warmers burn your paste because they get far too hot. Wax warmers frequently increase the temperature setting, occasionally even hotter than desired, then turn off until the temperature falls below a lower preset. This resembles a thermostat for a home. Warmers for sugar paste are always kept at a constant temperature. This enables the expert to keep their sugar warmer on continuously without turning it off.
